Hot n’ Healthy Kale Soup!

Happy Long weekend everyone! Here I am spending the weekend in the kitchen making a pot of my favourite delicious homemade kale soup. It is a very healthy alternative to canned soup. I am sure we all know that canned soups contain a lot of sodium – so steer clear of processed foods and opt to make it fresh and homemade whenever you can!

This recipe was passed on to me by a friend of my Mom’s and it is very easy to make, but be prepared – it takes some work to do! Trust me it’s worth it!

Here is a list of what you’ll need:
3 boxes of chicken broth
½ cup of extra virgin olive oil
½ cup of butter
2 cups of chopped chicken
2 cups of chopped potatoes
1 bag of frozen or fresh kale
1 cup of carrots
1/2 cup of onions
1 tsp celery salt
1 tsp garlic powder
1 tsp black pepper
1/2 tsp salt
1/2 tsp cayanne pepper
1 tsp thyme leaves
5 bay leaves

Cut the chicken into cubes then fry on a frying pan with extra virgin olive oil, add spices – cayenne pepper, celery salt, thyme leaves, black pepper, garlic powder.

Then once the chicken is cooked then throw them along with all your chopped veggies – onions,celery, carrots, potatoes into the pot.

Throw all the other ingredients into the pot and set on high to boil then cook for 2 hours on low heat.

You can change up this recipe by using spinach instead of kale. This time I didn’t include potatoes because I am trying to avoid anything starchy, plus I was not up for peeling the potatoes – it’s so time consuming!
